Food Galore: Tomato and Potato Soup

As a stay-at-home mom, I cook 3 times a day. I usually make a really simple breakfast, a hearty lunch, and a healthy dinner. I like to whip up quick meals which usually takes me around 30-45 minutes to complete. This is my favorite soup recipe in the whole world! It's my mom's Tomato and Potato Soup. It's quick, easy, healthy, and simply delicious! I didn't have pork neck bone at the time when I made this, but it still taste good. I would recommend making this soup with pork neck bone because it gives more flavor to the soup and you can eat the meat after. I like to use soy sauce to accompany the pork; it brings out the soft and buttery flavor within the meat. Cooking with any kind of pork or beef bone requires a little more work because you have to boil out the "impurities" from the bone. **see instructions.

Fill a medium size pot with water, 1/4 of the pot full (aprox. 5 cups of water)

Cut 2 big tomato (Tiger Tomato) in small wedges

Slice 4 small potato (peeled) in thick slices

Slice 1 onion

After the water boils (visible steam), put tomato, potato, and onion into the pot on medium-high heat with lid on. Once the water boils up again, remove lid and turn heat down to medium-low to cook for 1 hour. Before serving, add salt to taste. 

*If you find your pot overflowing, remove excess water and save it for later. The water in the pot will slightly evaporate over time and you can pour the excess water back into the pot to boil. 

**Instructions with pork neck bone (1/2 a pound): Fill a pot half way full with water and wait for it to boil. Meanwhile, rinse pork neck bone clean. When the water boils, put pork neck bone into the pot and wait for water to boil again with lid on. Let the water boil for 5 minutes then turn off the heat. Carefully pour out the pork neck bone into a colander. Rinse the pot. Fill the pot again with 1/4 water full. Follow the rest of the instructions. 
(When cooking with pork neck bone, use a bigger pot so when you add the rest of the ingredients, it won't overflow)
